"I started almost by chance, as a young boy in my early twenties, travelling around Sardinia doing the classic 'seasons' until I settled in Pisa. I stayed there for a couple of years gaining experience, managing kitchens for the first time and leaving the comfort-zone offered by my homeland, an umbilical cord that tied me to the traditions that raised me. Moving was necessary to be able to travel and discover new traditions, new cooking techniques, new tastes and new combinations. After a couple of years in Pisa, I decided to move to Rome with the intention of settling permanently...and it was love at first sight.
Rome is the ideal place to let all your imagination and creativity burst forth; I have always found opportunities just around the corner. After a few years spent in various restaurants in the capital, including managing the kitchen of a well-known restaurant. Driven by the desire to grow and put myself to the test, I landed at the Trinità de Monti restaurant in 2020; here I found what I was looking for, a new home where I could continue to grow, a 'laboratory' where I could create new dishes and continue to have fun, nurturing my great passion, making our customers happy with food."
